French Toast by Bethenny Frankel

Okay, I hate to admit it, but I love Bethenny Frankel from Real Housewives of NYC.  She’s really not even a housewife; I admire her for her work ethic and most of all, her recipes.  Bethenny is a natural foods chef who specializes in coming up with meals that leave you guilt-free, and she includes a lot of vegetarian recipes on her site as well.

This one is for french toast, my favorite!

Whole-Grain French Toast

  • 4 egg whites
  • 1 tsp. real vanilla extract
  • 1 tsp. maple syrup
  • 4 slices whole grain bread (preferably stale)
  • Topping: real maple syrup and fresh fruit
  • In a shallow pan, combine egg whites, vanilla extract and syrup. Beat lightly with a wire whisk.
  • Put the slices of bread into the pan, flip over to coat both sides.
  • Place a nonstick skillet over medium heat. Cook the slices on preheated skillet for 2 to 3 minutes on each side.
  • Serve immediately. Drizzle with maple syrup and top with fruit.
  • Does that sound delish?  Of course it’s really just your basic recipe for french toast using whole grain bread instead of regular bread, but maybe people don’t think of these things on their own.  And that is why we have Bethenny to tell us these things.
